LATE EVENING CUPCAKE


I spent the weekend baking for a 9- year old's birthday party. I was planning to also explore my new camera a bit but baking cakes, cookies and cupcakes for more than 20 persons didn't leave much room for that. (Except for this shot of my blueberry cupcakes, with green toffee frosting, later in the evening.)

Heather : yes, me sort of too - but I still have some cupcakes left and some of my carrot cake with strawberry filling and lemon-cheese frosting... think I'll donate most of it away at tomorrows coffee break at work, otherwise I'll munch it all up myself...

MargieF : I did reaaaally concentrate to get them not to only taste but to look yummy, as I have not baked properly in quite a while. The cupcakes turned out nice but I have to confess there was quite a mess in te kitchen afterwards!

WanjaB : it's a basic cupcake recipe with blueberries added, not too sweet themselves. I pretty much followed this recipe for the frosting: http://bakalitenkaka-tove.blogspot.com/2010/01/kinuskifrosting.html (in swedish) + green colour of course. But I added some more icing sugar actually, and think a little less cream cheese would've been better!
